Peaberry beans only account for 5-10% of a coffee crop. Peaberries are a natural mutation that occurs when only one seed germinates inside a coffee cherry, instead of the usual two. They are usually sorted out during the milling process at the second sorting for good reason. The round shape of the bean is believed to lead to a more concentrated and intense flavor. Because Tanzania provides ideal coffee growing condition, most Tanzanian coffee is graded SHG (Strictly High Grown).
